  • 4 slices of Promise Gluten Free Chia Seed Loaf
  • 50g butter, at room temperature
  • 1 tbsp gluten-free plain flour
  • 100ml milk
  • 80g gruyere cheese, grated
  • 2 tbsp Dijon mustard
  • 2 slices of good ham

STEP 1.Pre-heat a grill to high.

STEP 2.Put the butter in a medium sized pan and melt over a low heat.

STEP 3.Brush one side of each slice of bread with butter and grill butter-side up until golden and crisp. Set aside.

STEP 4.Stir the flour into the remaining butter in the pan and cook for a few minutes then gradually whisk in the milk, unil smooth. Simmer for a few minutes until thick, then take off the heat and stir in 30g of the cheese. Season to taste.

STEP 5.Spread the untoasted sides of the bread with mustard, then put the ham on top, followed by the cheese, grill for a few minutes until the cheese is melted.

STEP 6.Make into two sandwiches with toasted side uppermost, push down then top with béchamel sauce.

STEP 7.Grill for about 5 minutes until golden and bubbling. Serve immediately.
