Croque Monsieur
Impossibly good gluten free bakery

Preparation, Make 2 servings
INGREDIENTS
- 4 slices of PureBred Gluten Free White Loaf
- 50g butter, at room temperature
- 1 tbsp gluten-free plain flour
- 100ml milk
- 80g gruyere cheese, grated
- 2 tbsp Dijon mustard
- 2 slices of good ham
STEPS
STEP 1
Pre-heat a grill to high, Put the butter in a medium sized pan and melt over a low heat.
STEP 2
Brush one side of each slice of bread with butter and grill butter-side up until golden and crisp. Set aside.
STEP 3
Stir the flour into the remaining butter in the pan and cook for a few minutes then gradually whisk in the milk, until smooth. Simmer for a few minutes until thick, then take off the heat and stir in 30g of the cheese. Season to taste.
STEP 4
Spread the untoasted sides of the bread with mustard, then put the ham on top, followed by the cheese, grill for a few minutes until the cheese is melted.
STEP 5
Make into two sandwiches with toasted dide uppermost, push down then top with béchamel sauce. Grill for about 5 minutes until golden and bubbling. Serve immediately.
