Eggs Benedict on Sourdough Toast

INGREDIENTS
- 2 slices Promise Gluten Free Rustic White Sourdough
- 2 eggs
- 4 slices bacon
- 1 cup spinach
- Hollandaise sauce:
- 3 large egg yolks
- 2 tbsp lemon juice fresh
- ½ cup butter
- 1 pinch pepper
- Fresh herbs for garnish
STEPS
STEP 1
Make the Hollandaise sauce: Melt butter until frothy and hot - do NOT brown. Remove foam from butter. Add egg yolks and 1 tablespoon of the lemon juice to heat resistant bowl and blend for 5-10 seconds. Pour the hot butter in a slow, thin, steady stream into butter while continuously blending. Blend until smooth consistency achieved. Add pepper to taste.
STEP 2
Poach eggs to desired temperature.
STEP 3
Cook bacon until crisp.
STEP 4
Sautee spinach until wilted.
STEP 5
Toast Rustic White Sourdough slices.
STEP 6
Top each slice with half the spinach, two slices of bacon, and one egg. Pour Hollandaise sauce on top. Sprinkle with chopped fresh herbs.
