Italian Deli Ciabatta Sandwich

INGREDIENTS
  • 1 Promise Gluten Free Ciabatta Roll
  • 1 tbsp pesto
  • 2 slices of salami
  • 2 slices of provolone
  • 1 red pepper, sliced
  • 1/2 aubergine, cubed
  • 1-2 tbsp olive oil
  • Salt and pepper
  • Olives
  • Radicchio or Radishes
STEPS
STEP 1

Preheat oven to 400°F.

STEP 2

Toss red pepper and aubergine with olive oil, salt, and pepper. Place on baking sheet and roast until slightly charred, approximately 20 minutes, tossing halfway through.

STEP 3

Warm ciabatta roll according to package instructions. Slice in half.

STEP 4

Spread both sides with pesto.

STEP 5

Top with salami, provolone, roasted vegetables, olives and radicchio.
