Italian Deli Ciabatta Sandwich

INGREDIENTS
- 1 Promise Gluten Free Ciabatta Bun
- 1 tbsp pesto
- 2 slices of salami
- 2 slices of provolone
- 1 red pepper, sliced
- 1/2 eggplant, cubed
- 1-2 tbsp olive oil
- Salt and pepper
- Olives
- Radicchio
STEPS
STEP 1
Preheat oven to 400°F.
STEP 2
Toss red pepper and eggplant with olive oil, salt, and pepper. Place on baking sheet and roast until slightly charred, approximately 20 minutes, tossing halfway through.
STEP 3
Warm ciabatta bun according to package instructions. Slice in half.
STEP 4
Spread both sides with pesto.
STEP 5
Top with salami, provolone, roasted vegetables, olives and radicchio.
