10 mins Preparation, Make 1 servings
- 2 slices of Promise Gluten Free Multigrain Bread
- 3 tblsp Mayo
- Small handful of watercress
- 1 x Avocado, cut into wedges
- 2 x smoked mackerel fillets, in chunks
- 1 tsp dijon mustard
- ½ lemon
- 2 tblsp greek yoghurt
Make dressing by whisking together dijon mustard, greek yoghurt and lemon juice.
Make sandwich by first spreading each slice with some mayo,
Then layer on some sliced avocado, watercress and chunks of mackerel
Drizzle over the dressing.
