Roasted Root Vegetable Sandwich Rolls

INGREDIENTS
  • 1 Promise Gluten Free Sourdough Multi Seeded Roll
  • 1 beetroot, cut in wedges
  • 2 carrots, sliced
  • 1 red onion, cut in wedges
  • 1 fennel bulb, sliced
  • 2-3 tbsp olive oil
  • Salt and pepper
  • 1-2 tbsp pesto
  • Fresh herbs
STEPS
STEP 1

Preheat oven to 400°F.

STEP 2

Toss vegetables with olive oil and season with salt and pepper. Roast on a baking sheet for 20 minutes, tossing halfway through, until softened and slightly charred.

STEP 3

Warm Sourdough Multi Seeded Roll according to package instructions and slice lengthwise.

STEP 4

Spread pesto on bottom of roll and top with roasted vegetables. Add desired fresh herbs.
