Roasted Veggie Salad Sandwich

INGREDIENTS
  • 2 slices Promise Gluten Free Multigrain Loaf
  • 1 tbsp hummus
  • ½ eggplant, sliced
  • ½ sweet potato, cubed
  • 1-2 tbsp olive oil
  • Salt and pepper
  • 1-2 radishes, thinly sliced
  • 1 red onion, thinly sliced
  • Mixed leaf lettuce
STEPS
STEP 1

Preheat oven to 400°F.

STEP 2

Toss eggplant and sweet potato with olive oil and season with salt and pepper. Roast on a baking sheet for 20 minutes, tossing halfway through, until softened and slightly charred.

STEP 3

Spread hummus on both sides of Multigrain slices.

STEP 4

Top with roasted vegetables, radishes, red onion, and lettuce.
