Sweet Potato Soup

INGREDIENTS
- 1 onion
- 1 leek
- 2 stalks of celery chopped
- 2 sweet potatoes peeled and chopped
- 1 tin chopped tomatoes
- 500ml stock
- Salt and Pepper too season.
STEPS
STEP 1
Sweat the veg for 5 minutes in a large pan.
STEP 2
Add the tin of tomatoes and the stock and season.
STEP 3
Simmer for 25 minutes
STEP 4
Blitz with a hand blender.
STEP 5
Serve and enjoy.
